Description

Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup strawberry jam
  • 1/2 cup powdered sugar for rolling

Instructions

  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a medium bowl, whisk together the flour, baking powder, and salt.
  3. In a large bowl, cream the granulated sugar and butter until light and fluffy.
  4. Beat in the egg and vanilla extract until well combined.
  5. Gradually mix in the dry ingredients until a dough forms, then stir in the strawberry jam.
  6. Shape the dough into 1-inch balls and roll each ball in powdered sugar.
  7. Place the balls on the prepared baking sheets, spacing them about 2 inches apart.
  8. Bake for 10-12 minutes or until the edges are set and the tops are crinkled.
  9. Allow the cookies to cool on the baking sheets for 5 minutes before transferring to a wire rack.

Notes

For best results, use fresh strawberry jam. Store cookies in an airtight container for up to 3 days.
