Instructions
- Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a medium bowl, whisk together the flour, baking powder, and salt.
- In a large bowl, cream the granulated sugar and butter until light and fluffy.
- Beat in the egg and vanilla extract until well combined.
- Gradually mix in the dry ingredients until a dough forms, then stir in the strawberry jam.
- Shape the dough into 1-inch balls and roll each ball in powdered sugar.
- Place the balls on the prepared baking sheets, spacing them about 2 inches apart.
- Bake for 10-12 minutes or until the edges are set and the tops are crinkled.
- Allow the cookies to cool on the baking sheets for 5 minutes before transferring to a wire rack.
Notes
For best results, use fresh strawberry jam. Store cookies in an airtight container for up to 3 days.
