- 1 package strawberry gelatin mix
- 1 teaspoon baking soda

- 1 cup crushed vanilla wafers
- 1/2 cup chopped fresh strawberries
Instructions
- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a large bowl, cream together butter and sugar until light and fluffy.
- Beat in the egg and vanilla extract.
- In another bowl, whisk together flour, strawberry gelatin, baking soda, and salt.
- Gradually add the dry ingredients to the wet mixture, stirring until combined.
- Fold in the chopped strawberries.
- Scoop dough into balls and roll in crushed vanilla wafers.
- Place on prepared baking sheets and bake for 10-12 minutes or until edges are golden.
- Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack.
