- 1 tablespoon matcha powder
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 cup fresh strawberries, pureed
- 2 cups powdered sugar for frosting
- 1 tablespoon milk for frosting
Instructions
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a medium bowl, whisk together flour, matcha powder, baking powder, and salt.
- In a large bowl, cream butter and sugar until light and fluffy. Add egg and vanilla extract, mixing well.
- Gradually add the dry ingredients to the wet mixture, stirring until combined.
- Scoop dough onto the prepared baking sheet and bake for 10-12 minutes.
- While cookies cool, prepare frosting by mixing strawberry puree, powdered sugar, and milk until smooth.
- Frost the cooled cookies and let set before serving.
Notes
For a stronger matcha flavor, increase the powder to 2 tablespoons. Store in an airtight container for up to 3 days.
