Description

Soft matcha cookies topped with a sweet strawberry frosting, perfect for a unique dessert.


Ingredients

  • 2 cups all-purpose flour
  • 1 tablespoon matcha powder
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup fresh strawberries, pureed
  • 2 cups powdered sugar for frosting
  • 1 tablespoon milk for frosting

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together flour, matcha powder, baking powder, and salt.
  3. In a large bowl, cream butter and sugar until light and fluffy. Add egg and vanilla extract, mixing well.
  4. Gradually add the dry ingredients to the wet mixture, stirring until combined.
  5. Scoop dough onto the prepared baking sheet and bake for 10-12 minutes.
  6. While cookies cool, prepare frosting by mixing strawberry puree, powdered sugar, and milk until smooth.
  7. Frost the cooled cookies and let set before serving.

Notes

For a stronger matcha flavor, increase the powder to 2 tablespoons. Store in an airtight container for up to 3 days.
