For the Crust:
- 2 cups all-purpose flour
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 4 large eggs
- 1/2 cup crushed pineapple, drained
- 1 cup diced fresh strawberries
- 1 tsp vanilla extract
- 1 tsp baking powder
- 1/4 tsp salt
Instructions
1. Prepare the Crust:
- Preheat your oven to 350ยฐF (175ยฐC) and grease a loaf pan.
- In a large mixing bowl, cream the butter and sugar until light and fluffy. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
- In another bowl, combine the flour, baking powder, and salt. Gradually add the dry ingredients to the creamed mixture, mixing just until combined. Fold in the crushed pineapple and diced strawberries.
- Pour the batter into the prepared loaf pan, smoothing the top with a spatula.
- Bake for about 60-70 minutes or until a toothpick inserted into the center comes out clean. Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
