For the Crust:

  • 2 cups all-purpose flour
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 4 large eggs
  • 1/2 cup crushed pineapple, drained
  • 1 cup diced fresh strawberries
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 1/4 tsp salt

Instructions

1. Prepare the Crust:

  1. Preheat your oven to 350ยฐF (175ยฐC) and grease a loaf pan.
  2. In a large mixing bowl, cream the butter and sugar until light and fluffy. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
  3. In another bowl, combine the flour, baking powder, and salt. Gradually add the dry ingredients to the creamed mixture, mixing just until combined. Fold in the crushed pineapple and diced strawberries.
  4. Pour the batter into the prepared loaf pan, smoothing the top with a spatula.
  5. Bake for about 60-70 minutes or until a toothpick inserted into the center comes out clean. Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
