Description

Its strawberries & cream meets cheesecake in a grab-and-go bar tag your summer picnic crew!


Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 2 packages (8 ounces each) cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup heavy whipping cream
  • 2 cups fresh strawberries, hulled and sliced

Instructions

  1. Preheat oven to 350°F (175°C) and line a 9×13 inch baking pan with parchment paper.
  2. In a medium bowl, mix graham cracker crumbs, granulated sugar, and melted butter until combined. Press the mixture evenly into the bottom of the prepared pan.
  3. Bake for 10 minutes, then remove from oven and let cool completely.
  4. In a large bowl, beat the cream cheese until smooth. Add powdered sugar and vanilla extract, mixing until well combined.
  5. In a separate bowl, whip the heavy whipping cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture.
  6. Spread the cream cheese mixture evenly over the cooled crust.
  7. Top with sliced strawberries and refrigerate for at least 2 hours or until set.
  8. Cut into bars and serve chilled.

Notes

For best results, use fresh strawberries; store leftovers in the refrigerator for up to 3 days.
