For the Crust:
- 2 cups all-purpose flour
- 1 cup sugar
- 1 cup strawberry puree
- 1/2 cup unsalted butter
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- 1/4 teaspoon salt
Instructions
1. Prepare the Crust:
- Preheat the oven to 350ยฐF (175ยฐC). Grease and flour two 8-inch round cake pans.
- In a large bowl, cream the butter and sugar until light and fluffy. Add the eggs one at a time, beating well after each addition.
- Mix in the strawberry puree and vanilla extract. In another bowl, combine the flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing just until combined.
- Divide the batter evenly between the prepared pans. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
- Allow the cakes to cool in the pans for 10 minutes, then turn them out onto a wire rack to cool completely.
- Frost with your favorite frosting and garnish with fresh strawberries.
