For the Crust:

  • 2 cups cooked rice
  • 1 lb boneless chicken breast, cubed
  • 1 cup corn kernels
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • 1/4 cup crumbled cotija cheese
  • 1/4 cup chopped cilantro
  • 1 lime, cut into wedges

Instructions

1. Prepare the Crust:

  1. Heat olive oil in a large skillet over medium-high heat. Add the cubed chicken, chili powder, cumin, garlic powder, salt, and pepper. Cook until chicken is golden and cooked through, about 6-8 minutes.
  2. Add corn kernels to the skillet and cook for an additional 2-3 minutes, stirring occasionally.
  3. Divide cooked rice into bowls. Top with the chicken and corn mixture, sprinkle with cotija cheese and cilantro, and serve with lime wedges on the side.
