For the Crust:
- 2 cups cooked rice
- 1 lb boneless chicken breast, cubed
- 1 cup corn kernels
- 1 tablespoon olive oil
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
- 1/4 cup crumbled cotija cheese
- 1/4 cup chopped cilantro
- 1 lime, cut into wedges
Instructions
1. Prepare the Crust:
- Heat olive oil in a large skillet over medium-high heat. Add the cubed chicken, chili powder, cumin, garlic powder, salt, and pepper. Cook until chicken is golden and cooked through, about 6-8 minutes.
- Add corn kernels to the skillet and cook for an additional 2-3 minutes, stirring occasionally.
- Divide cooked rice into bowls. Top with the chicken and corn mixture, sprinkle with cotija cheese and cilantro, and serve with lime wedges on the side.
