- 4 medium sweet potatoes
- 2 cups fresh spinach, chopped
- 1 ripe avocado, diced
- 1 cup mushrooms, sliced
- 1/2 cup feta cheese, crumbled
- 2 tablespoons olive oil

Instructions
- Preheat the oven to 400°F (200°C).
- Wash and prick the sweet potatoes with a fork, then bake for 45-50 minutes until tender.
- In a skillet, heat olive oil over medium heat and sauté mushrooms for 5 minutes.
- Add chopped spinach to the skillet and cook until wilted, about 2-3 minutes.
- Once sweet potatoes are done, cut them open and stuff with the mushroom-spinach mixture.
- Top with diced avocado and crumbled feta cheese.
- Season with salt and pepper, and serve immediately.
