Description

These stuffed sweet potatoes are packed with nutritious spinach, creamy avocado, savory mushrooms, and tangy feta cheese, making for a delicious and healthy meal.


Ingredients

  • 4 medium sweet potatoes
  • 2 cups fresh spinach, chopped
  • 1 ripe avocado, diced
  • 1 cup mushrooms, sliced
  • 1/2 cup feta cheese, crumbled
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and prick the sweet potatoes with a fork, then bake for 45-50 minutes until tender.
  3. In a skillet, heat olive oil over medium heat and sauté mushrooms for 5 minutes.
  4. Add chopped spinach to the skillet and cook until wilted, about 2-3 minutes.
  5. Once sweet potatoes are done, cut them open and stuff with the mushroom-spinach mixture.
  6. Top with diced avocado and crumbled feta cheese.
  7. Season with salt and pepper, and serve immediately.

Notes

For a vegan version, substitute feta with a plant-based alternative. Ensure avocados are ripe for the best flavor.
