Description

These sugar cookie cups are soft and buttery, filled with a rich cream cheese buttercream frosting, perfect for a sweet treat.


Ingredients

  • 2 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 cup unsalted butter, softened
  • 1 1/2 cups white sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • For frosting: 8 oz cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 375 degrees F (190 degrees C). Grease a mini muffin tin.
  2. In a small bowl, stir together flour, baking soda, and baking powder. Set aside.
  3. In a large bowl, cream together the butter and sugar until smooth. Beat in the egg and vanilla.
  4. Gradually blend in the dry ingredients.
  5. Roll rounded teaspoonfuls of dough into balls and place into muffin tin cups.
  6. Bake for 8 to 10 minutes in the preheated oven, or until golden. Let cool completely.
  7. For frosting: Beat cream cheese and butter until smooth. Gradually add powdered sugar and vanilla; mix until creamy.
  8. Pipe or spread frosting onto cooled cookie cups.

Notes

Ensure cookies are fully cooled before adding frosting to prevent melting. Store in an airtight container.
