This Heavenly Summer Peach Cobbler Poke Cake is a moist cake infused with peach flavors, topped with a cobbler-like crumble, perfect for summer gatherings.

- 1 box yellow cake mix
- 1 cup water
- 1/2 cup vegetable oil
- 3 large eggs
- 4 fresh peaches, peeled and sliced
- 1 cup granulated sugar
- 1/2 cup brown sugar
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1 cup all-purpose flour for topping
- 1/2 cup butter, melted
Instructions
- Preheat oven to 350°F (175°C) and grease a 9×13 inch baking dish.
- Prepare the cake mix according to package instructions and pour into the prepared dish.
- Bake for 25-30 minutes or until a toothpick comes out clean.
- While the cake is still warm, poke holes all over the top using the end of a wooden spoon.
- In a saucepan, combine sliced peaches, granulated sugar, brown sugar, cinnamon, and nutmeg. Cook over medium heat until peaches are soft, about 10 minutes.
- Pour the peach mixture over the cake, allowing it to seep into the holes.
- In a bowl, mix flour and melted butter until crumbly; sprinkle over the top of the cake.
- Bake for an additional 15-20 minutes until the topping is golden brown.
- Allow to cool before serving. Serve with whipped cream or ice cream.
Notes
For the best flavor, use ripe summer peaches. This cake can be stored in the refrigerator for up to 3 days.
