A hearty and comforting pot roast perfect for a relaxing Sunday dinner.

For the Crust:

  • 3 lbs beef chuck roast
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 carrots, sliced
  • 2 cups beef broth
  • 1 cup red wine
  • 2 tablespoons tomato paste
  • 2 sprigs fresh thyme
  • Salt and pepper to taste

Instructions

1. Prepare the Crust:

  1. Season the beef with salt and pepper. In a large pot, heat olive oil over medium-high heat. Sear the roast on all sides until brown, about 4-5 minutes per side.
  2. Remove the roast and set aside. In the same pot, add onion, garlic, and carrots; cook for about 5 minutes until vegetables are softened.
  3. Stir in beef broth, red wine, and tomato paste, then add the roast back into the pot. Add thyme sprigs on top. Cover and simmer on low heat for about 30 minutes, until the roast is tender.
