For the Crust:
- 2 cups mashed sweet potatoes
- 1/2 cup honey
- 1 cup granulated sugar
- 3/4 cup vegetable oil
- 4 eggs
- 2 1/2 cups all-purpose flour
- 2 tsp baking powder
- 1 tsp baking soda
- 1/2 tsp salt
- 1 1/2 tsp ground cinnamon
- 1/2 tsp nutmeg
Instructions
1. Prepare the Crust:
- Preheat your oven to 350ยฐF (175ยฐC) and grease a 9×13 inch baking dish.
- In a large bowl, combine the mashed sweet potatoes, honey, sugar, oil, and eggs. Mix well until smooth.
- In another bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg. Gradually add the dry ingredients to the wet ingredients, stirring just until combined.
- Pour the batter into the prepared baking dish and bake for 30 minutes, or until a toothpick inserted in the center comes out clean.
- Allow the cake to cool before serving.
