For the Crust:

  • 2 cups mashed sweet potatoes
  • 1/2 cup honey
  • 1 cup granulated sugar
  • 3/4 cup vegetable oil
  • 4 eggs
  • 2 1/2 cups all-purpose flour
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 1/2 tsp ground cinnamon
  • 1/2 tsp nutmeg

Instructions

1. Prepare the Crust:

  1. Preheat your oven to 350ยฐF (175ยฐC) and grease a 9×13 inch baking dish.
  2. In a large bowl, combine the mashed sweet potatoes, honey, sugar, oil, and eggs. Mix well until smooth.
  3. In another bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg. Gradually add the dry ingredients to the wet ingredients, stirring just until combined.
  4. Pour the batter into the prepared baking dish and bake for 30 minutes, or until a toothpick inserted in the center comes out clean.
  5. Allow the cake to cool before serving.
