Ingredients

  • 2 cups all-purpose flour
  • 1 cup mashed sweet potatoes
  • 1/2 cup honey
  • 1 cup chopped pecans
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. In a large bowl, cream together the butter and sugar until light and fluffy.
  3. Add the eggs one at a time, beating well after each addition.
  4. Mix in the mashed sweet potatoes and honey until well combined.
  5. In another bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon.
  6. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  7. Fold in the chopped pecans.
  8. Pour the batter into the prepared pan and smooth the top.
  9. Bake for 40-45 minutes, or until a toothpick inserted into the center comes out clean.
  10. Allow the cake to cool in the pan for 10 minutes before serving.

Notes

For a nut-free version, substitute pecans with walnuts or omit them. Store in an airtight container for up to 3 days.
