For the Crust:
- 4 medium sweet potatoes
- 2 cups cooked roast turkey, shredded
- 1 cup cranberry sauce
- 1/2 cup shredded cheddar cheese
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
1. Prepare the Crust:
- Preheat oven to 400ยฐF (200ยฐC). Wash and dry sweet potatoes, then rub with olive oil and prick with a fork.
- Place sweet potatoes on a baking sheet and bake for 30-35 minutes until tender.
- Slice sweet potatoes open and fluff the insides with a fork. Fill each with turkey, cranberry sauce, and top with cheddar cheese.
