Description

A delicious and hearty dish perfect for utilizing leftover roast turkey and cranberry sauce, served in baked sweet potatoes.

For the Crust:

  • 4 medium sweet potatoes
  • 2 cups cooked roast turkey, shredded
  • 1 cup cranberry sauce
  • 1/2 cup shredded cheddar cheese
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400ยฐF (200ยฐC). Wash and dry sweet potatoes, then rub with olive oil and prick with a fork.
  2. Place sweet potatoes on a baking sheet and bake for 30-35 minutes until tender.
  3. Slice sweet potatoes open and fluff the insides with a fork. Fill each with turkey, cranberry sauce, and top with cheddar cheese.
