Description

A delicious fusion of creamy mac and cheese with spicy taco flavors.


Ingredients

  • 8 ounces elbow macaroni
  • 1 pound ground beef
  • 1 packet taco seasoning
  • 2 cups shredded cheddar cheese
  • 1 cup milk
  • 1/2 cup sour cream
  • 1 can (10 ounces) diced tomatoes with green chilies
  • Salt and pepper to taste
  • Optional toppings: chopped cilantro, sliced jalapeños

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Cook macaroni according to package instructions; drain and set aside.
  3. In a large skillet, brown the ground beef over medium heat; drain excess fat.
  4. Add taco seasoning and diced tomatoes with green chilies to the beef; stir and simmer for 5 minutes.
  5. In a separate pot, heat milk and stir in shredded cheddar cheese until melted and smooth.
  6. Combine the cooked macaroni, beef mixture, and cheese sauce in a large bowl; mix well.
  7. Transfer to a baking dish, top with additional cheese if desired, and bake for 20 minutes or until bubbly.
  8. Remove from oven, let cool slightly, and top with sour cream and optional toppings before serving.
