- 8 ounces elbow macaroni
- 1 pound ground beef
- 1 packet taco seasoning
- 2 cups shredded cheddar cheese
- 1 cup milk
- 1/2 cup sour cream
- 1 can (10 ounces) diced tomatoes with green chilies
- Salt and pepper to taste
- Optional toppings: chopped cilantro, sliced jalapeños
Instructions
- Preheat oven to 350°F (175°C).
- Cook macaroni according to package instructions; drain and set aside.
- In a large skillet, brown the ground beef over medium heat; drain excess fat.
- Add taco seasoning and diced tomatoes with green chilies to the beef; stir and simmer for 5 minutes.
- In a separate pot, heat milk and stir in shredded cheddar cheese until melted and smooth.
- Combine the cooked macaroni, beef mixture, and cheese sauce in a large bowl; mix well.
- Transfer to a baking dish, top with additional cheese if desired, and bake for 20 minutes or until bubbly.
- Remove from oven, let cool slightly, and top with sour cream and optional toppings before serving.
