- 8 ounces spaghetti
- 1 pound ground beef
- 1 packet taco seasoning
- 1 cup water
- 1 can (15 ounces) black beans, drained and rinsed
- 1 cup shredded cheddar cheese
- 1/2 cup chopped onion
- 1/2 cup chopped bell pepper
- 1 can (10 ounces) diced tomatoes with green chilies
- Salt and pepper to taste
- Optional toppings: sour cream, avocado, and fresh cilantro
Instructions
- Cook the spaghetti according to package instructions; drain and set aside.
- In a large skillet, brown the ground beef over medium heat until no longer pink; drain excess fat.
- Add the chopped onion and bell pepper to the skillet and cook until softened, about 5 minutes.
- Stir in the taco seasoning and water; bring to a simmer and cook for 5 minutes.
- Add the black beans and diced tomatoes; stir and cook for another 5 minutes.
- Mix in the cooked spaghetti and shredded cheese until well combined and cheese is melted.
- Season with salt and pepper to taste.
- Serve hot with optional toppings like sour cream, avocado, and cilantro.
