For the Crust:
- 1 baguette, sliced into 1/2-inch rounds
- 4 ounces goat cheese, softened
- 2 tablespoons heavy cream
- 1 cup fresh blueberries
- 2 tablespoons balsamic vinegar
- 2 tablespoons honey
- Salt and pepper to taste
Instructions
1. Prepare the Crust:
- Preheat oven to 375ยฐF (190ยฐC). Arrange baguette slices on a baking sheet and toast for 5-6 minutes until golden brown.
- In a bowl, whip together the goat cheese and heavy cream until smooth and creamy.
- In a small saucepan over medium heat, combine blueberries, balsamic vinegar, and honey. Simmer until blueberries begin to burst and mixture thickens, about 5-7 minutes.
- Spread a generous amount of whipped goat cheese on each toasted crostini.
- Top with a spoonful of blueberry balsamic reduction and season with salt and pepper.
