For the Crust:

  • 1 baguette, sliced into 1/2-inch rounds
  • 4 ounces goat cheese, softened
  • 2 tablespoons heavy cream
  • 1 cup fresh blueberries
  • 2 tablespoons balsamic vinegar
  • 2 tablespoons honey
  • Salt and pepper to taste

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375ยฐF (190ยฐC). Arrange baguette slices on a baking sheet and toast for 5-6 minutes until golden brown.
  2. In a bowl, whip together the goat cheese and heavy cream until smooth and creamy.
  3. In a small saucepan over medium heat, combine blueberries, balsamic vinegar, and honey. Simmer until blueberries begin to burst and mixture thickens, about 5-7 minutes.
  4. Spread a generous amount of whipped goat cheese on each toasted crostini.
  5. Top with a spoonful of blueberry balsamic reduction and season with salt and pepper.
