For the Crust:
- 2 large sweet onions (such as Vidalia), thinly sliced
- 1 cup shredded sharp cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 1/2 cup mayonnaise
- 1/2 cup grated Parmesan cheese
- 1/2 cup butter, melted
- 1 sleeve buttery round crackers (like Ritz), crushed
- 1 teaspoon garlic powder
- 1/2 teaspoon smoked paprika
- Salt and black pepper to taste
Instructions
1. Prepare the Crust:
- Preheat oven to 350ยฐF (175ยฐC). Grease a 9×13 inch baking dish.
- Arrange the sliced onions in an even layer in the prepared baking dish. Season with salt and pepper.
- In a medium bowl, combine the cheddar cheese, Monterey Jack cheese, mayonnaise, and garlic powder. Spread this mixture evenly over the onions.
- In a separate bowl, mix the crushed crackers, melted butter, and grated Parmesan cheese. Sprinkle this topping evenly over the cheese layer.
- Bake for 30-35 minutes, or until the top is golden brown and crispy and the onions are tender. Let stand for 5 minutes before serving.
