Description

Sliced sweet onions baked in a creamy, cheesy sauce with a crispy, buttery cracker topping. An irresistible side dish that’s even better than onion rings.

For the Crust:

  • 2 large sweet onions (such as Vidalia), thinly sliced
  • 1 cup shredded sharp cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1/2 cup mayonnaise
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup butter, melted
  • 1 sleeve buttery round crackers (like Ritz), crushed
  • 1 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • Salt and black pepper to taste

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350ยฐF (175ยฐC). Grease a 9×13 inch baking dish.
  2. Arrange the sliced onions in an even layer in the prepared baking dish. Season with salt and pepper.
  3. In a medium bowl, combine the cheddar cheese, Monterey Jack cheese, mayonnaise, and garlic powder. Spread this mixture evenly over the onions.
  4. In a separate bowl, mix the crushed crackers, melted butter, and grated Parmesan cheese. Sprinkle this topping evenly over the cheese layer.
  5. Bake for 30-35 minutes, or until the top is golden brown and crispy and the onions are tender. Let stand for 5 minutes before serving.
