Description
A delicious dessert combining sweet toffee apples in a flaky pie crust, served with creamy vanilla custard.

- For the pastry: 200g plain flour
- 100g unsalted butter, chilled and cubed
- 50g caster sugar
- 1 egg yolk
- 2–3 tbsp cold water
- For the filling: 6 medium apples, peeled, cored, and sliced
- 100g toffee sauce
- 50g brown sugar
- 1 tsp cinnamon
- For the vanilla custard: 300ml whole milk
- 150ml double cream
- 1 vanilla pod, split and seeds scraped
- 4 egg yolks
- 50g caster sugar
Instructions
- Step 1: Make the pastry by rubbing the butter into the flour until it resembles breadcrumbs, then stir in the sugar and egg yolk. Add water to form a dough, wrap and chill for 30 minutes.
- Step 2: Preheat the oven to 200ยฐC. Roll out the pastry and line a pie dish.
- Step 3: For the filling, mix the apples with toffee sauce, brown sugar, and cinnamon. Pour into the pastry case.
- Step 4: Bake for 35-40 minutes until golden. Let cool.
- Step 5: For the custard, heat milk, cream, and vanilla in a pan. Whisk egg yolks and sugar, then pour in the hot mixture. Return to heat and stir until thickened. Serve with the pie.

Ensure apples are firm for the best texture; serve warm for optimal flavor.
