A delicious cake roll infused with chocolate, caramel, and pecans, reminiscent of the classic turtle candy.

For the Crust:
- 4 large eggs
- 3/4 cup granulated sugar
- 1 teaspoon vanilla extract
- 1/3 cup cocoa powder
- 3/4 cup all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup caramel sauce
- 1/2 cup chopped pecans
- 1 cup heavy cream
- 2 tablespoons powdered sugar
Instructions
1. Prepare the Crust:
- Preheat oven to 350ยฐF (175ยฐC) and line a jelly roll pan with parchment paper.
- In a bowl, beat eggs and sugar until thickened. Add vanilla and mix in the cocoa powder, flour, baking powder, and salt until combined.
- Spread the batter evenly in the pan and bake for 10-12 minutes. Turn out onto a clean towel dusted with powdered sugar. Roll up gently and let cool.
- Unroll the cooled cake and spread with caramel sauce and sprinkle with pecans. Whip the cream with powdered sugar until stiff peaks form and spread over the caramel. Roll the cake back up and refrigerate.
- Before serving, drizzle with additional caramel and garnish with pecans.
