For the Crust:
- 1 lb boneless, skinless chicken breasts
- 1 tbsp olive oil
- 1 tsp dried oregano
- Salt and pepper to taste
- 1 large English cucumber, diced
- 1 cup cherry tomatoes, halved
- 1/2 red onion, thinly sliced
- 1 cup plain Greek yogurt
- 2 cloves garlic, minced
- 2 tbsp fresh dill, chopped
- 1 tbsp lemon juice
Instructions
1. Prepare the Crust:
- Season chicken breasts with olive oil, oregano, salt, and pepper. Grill for 6-7 minutes per side, or until cooked through. Let rest, then slice or chop.
- In a medium bowl, make the tzatziki by combining Greek yogurt, half of the diced cucumber (seeds removed and squeezed dry), garlic, dill, and lemon juice. Season with salt and pepper.
- In a large salad bowl, combine the remaining diced cucumber, cherry tomatoes, and red onion. Add the sliced chicken and pour the tzatziki sauce over everything. Toss gently to combine and serve immediately.
