For the Crust:

  • 2 lbs beef tenderloin
  • 2 large yellow onions, thinly sliced
  • 3 tbsp butter
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp thyme
  • 1/2 cup beef broth
  • 1 tbsp balsamic vinegar

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375ยฐF (190ยฐC). Season the beef tenderloin with salt, pepper, and thyme.
  2. Heat olive oil in a large skillet over medium-high heat. Sear the tenderloin on all sides until browned, about 3 minutes per side.
  3. Transfer the tenderloin to a roasting pan and roast in the oven for 25-30 minutes, or until the internal temperature reaches 135ยฐF (57ยฐC) for medium-rare.
  4. While the beef roasts, melt butter in the same skillet. Add sliced onions and cook over medium heat, stirring occasionally, until caramelized (about 20 minutes).
  5. Deglaze the skillet with beef broth and balsamic vinegar, scraping up any browned bits. Simmer for 2-3 minutes until slightly reduced.
  6. Let the beef rest for 10 minutes before slicing. Serve topped with the caramelized French onions.
