A refreshing, creamy cheese cake with a tropical mango twist, perfect for hot summer days without the need for baking.

For the Crust:
- 200g digestive biscuits, crushed
- 100g unsalted butter, melted
- 300g cream cheese, softened
- 200ml heavy cream
- 150g sugar
- 2 ripe mangoes, pureed
Instructions
1. Prepare the Crust:
- Combine crushed biscuits and melted butter, press into the bottom of a springform pan. Chill in the refrigerator.
- In a mixing bowl, whip cream cheese with sugar until smooth. Gradually fold in heavy cream and half of the mango puree.
- Pour the cream cheese mixture over the chilled biscuit base. Swirl remaining mango puree on top. Refrigerate for at least 4 hours before serving.
