Unbaked Cheese and Mango Cake

Description

A refreshing, creamy cheese cake with a tropical mango twist, perfect for hot summer days without the need for baking.


Ingredients

For the Crust:

  • 200g digestive biscuits, crushed
  • 100g unsalted butter, melted
  • 300g cream cheese, softened
  • 200ml heavy cream
  • 150g sugar
  • 2 ripe mangoes, pureed

Instructions

1. Prepare the Crust:

  1. Combine crushed biscuits and melted butter, press into the bottom of a springform pan. Chill in the refrigerator.
  2. In a mixing bowl, whip cream cheese with sugar until smooth. Gradually fold in heavy cream and half of the mango puree.
  3. Pour the cream cheese mixture over the chilled biscuit base. Swirl remaining mango puree on top. Refrigerate for at least 4 hours before serving.

Notes

You can customize the seasonings to taste.
