Description

Soft and chewy cookies infused with fresh strawberries, perfect for Valentine’s Day treats.


Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 1 cup fresh strawberries, chopped
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • Red food coloring (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, cream together the butter and sugar until light and fluffy.
  3. Beat in the egg and vanilla extract until well combined.
  4. Gradually add the flour, baking powder, and salt to the mixture, stirring until a dough forms.
  5. Gently fold in the chopped strawberries and a few drops of red food coloring if desired.
  6. Scoop tablespoon-sized portions of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  7. Bake for 10-12 minutes or until the edges are lightly golden.
  8. Allow the cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack.

Notes

For best results, use ripe strawberries to enhance the flavor. Store in an airtight container for up to 3 days.
