Ingredients

- 2 cups granulated sugar
- 1 cup brown sugar
- 1 cup heavy cream
- 1/2 cup unsalted butter
- 2 cups pecan halves
- 2 teaspoons vanilla extract
- 1/4 teaspoon salt
Instructions
- In a large saucepan over medium heat, combine granulated sugar, brown sugar, heavy cream, butter, and salt.
- Stir constantly until the mixture reaches 235°F (soft ball stage) on a candy thermometer.
- Remove from heat and stir in pecans and vanilla extract until the mixture becomes thick and cloudy.
- Drop spoonfuls onto waxed paper and let cool completely before serving.
Notes
Pralines will set as they cool. If the mixture doesn’t thicken, cook a bit longer next time.
