For the Crust:
- 1 pound chicken breast, cubed
- 1 cup sun-dried tomatoes, julienned
- 4 cups chicken broth
- 1 cup heavy cream
- 1 pound potato gnocchi
- 2 cups fresh spinach
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- Salt and pepper to taste
Instructions
1. Prepare the Crust:
- In a large pot, heat olive oil over medium heat. Add cubed chicken breast and cook until brown on all sides.
- Add sun-dried tomatoes, chicken broth, and cream to the pot. Bring to a gentle simmer and let cook for 10 minutes.
- Stir in gnocchi and spinach. Let the soup cook for another 10 minutes or until gnocchi is tender. Season with garlic powder, salt, and pepper.
