- 1 cup wild rice
- 2 cups sliced mushrooms
- 1 onion, diced
- 2 garlic cloves, minced
- 4 cups vegetable broth
- 1 cup heavy cream
- 2 tablespoons fresh thyme
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- Rinse the wild rice under cold water and set aside.
- In a large pot, heat olive oil over medium heat. Add diced onion and minced garlic, sautรฉ until softened.
- Add sliced mushrooms and cook until they release their moisture.
- Stir in the wild rice and vegetable broth. Bring to a boil, then reduce heat and simmer for 45 minutes or until rice is tender.
- Stir in heavy cream and fresh thyme. Season with salt and pepper.
- Blend the soup partially for a velvety texture, if desired.
- Serve hot, garnished with additional fresh herbs.
Notes
For a vegan version, substitute heavy cream with coconut milk.
