Description

A hearty and comforting soup featuring wild rice, mushrooms, and fresh herbs for a velvety texture.


Ingredients

  • 1 cup wild rice
  • 2 cups sliced mushrooms
  • 1 onion, diced
  • 2 garlic cloves, minced
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • 2 tablespoons fresh thyme
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Rinse the wild rice under cold water and set aside.
  2. In a large pot, heat olive oil over medium heat. Add diced onion and minced garlic, sautรฉ until softened.
  3. Add sliced mushrooms and cook until they release their moisture.
  4. Stir in the wild rice and vegetable broth. Bring to a boil, then reduce heat and simmer for 45 minutes or until rice is tender.
  5. Stir in heavy cream and fresh thyme. Season with salt and pepper.
  6. Blend the soup partially for a velvety texture, if desired.
  7. Serve hot, garnished with additional fresh herbs.

Notes

For a vegan version, substitute heavy cream with coconut milk.
