Description

A creamy whipped feta dip topped with sweet and tangy roasted strawberries, perfect for appetizers or snacks.


Ingredients

  • 8 ounces feta cheese, crumbled
  • 1/4 cup Greek yogurt
  • 2 tablespoons olive oil
  • 1 tablespoon honey
  • 1 pound fresh strawberries, hulled and halved
  • 1 tablespoon balsamic vinegar
  • Salt and pepper to taste
  • Fresh herbs for garnish, such as mint or basil

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Toss the halved strawberries with balsamic vinegar, honey, and a pinch of salt on a baking sheet.
  3. Roast the strawberries in the oven for 15-20 minutes until softened and syrupy.
  4. In a food processor, combine the crumbled feta cheese, Greek yogurt, olive oil, and a pinch of black pepper. Blend until smooth and creamy.
  5. Spread the whipped feta onto a serving plate.
  6. Top the whipped feta with the roasted strawberries and their juices.
  7. Garnish with fresh herbs and serve immediately with crackers or bread.

Notes

For a spicier version, add red pepper flakes to the strawberries before roasting. Store leftovers in an airtight container in the refrigerator for up to 2 days.
