- 8 ounces feta cheese, crumbled
- 1/4 cup Greek yogurt
- 2 tablespoons olive oil
- 1 tablespoon honey
- 1 pound fresh strawberries, hulled and halved
- 1 tablespoon balsamic vinegar
- Salt and pepper to taste
- Fresh herbs for garnish, such as mint or basil
Instructions
- Preheat the oven to 400°F (200°C).
- Toss the halved strawberries with balsamic vinegar, honey, and a pinch of salt on a baking sheet.
- Roast the strawberries in the oven for 15-20 minutes until softened and syrupy.
- In a food processor, combine the crumbled feta cheese, Greek yogurt, olive oil, and a pinch of black pepper. Blend until smooth and creamy.
- Spread the whipped feta onto a serving plate.
- Top the whipped feta with the roasted strawberries and their juices.
- Garnish with fresh herbs and serve immediately with crackers or bread.
Notes
For a spicier version, add red pepper flakes to the strawberries before roasting. Store leftovers in an airtight container in the refrigerator for up to 2 days.
