- 8 oz feta cheese, crumbled
- 1/4 cup plain Greek yogurt
- 1 tablespoon olive oil
- 1 teaspoon lemon juice
- For the strawberries: 1 pound fresh strawberries, hulled and halved
- 1 tablespoon balsamic vinegar
- 1 tablespoon honey
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- In a food processor, combine the feta cheese, Greek yogurt, olive oil, and lemon juice. Blend until smooth and creamy.
- Spread the whipped feta into a serving dish.
- For the strawberries: In a bowl, toss the halved strawberries with balsamic vinegar, honey, salt, and pepper.
- Roast the strawberries on a baking sheet for 15-20 minutes, or until softened and caramelized.
- Top the whipped feta with the roasted strawberries and serve immediately.
