Delicious muffins combining white chocolate and pistachios for a sweet and nutty treat.
Ingredients

- 2 cups all-purpose flour
- 1/2 cup white sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 cup milk
- 1/2 cup vegetable oil
- 2 large eggs
- 1 cup white chocolate chips
- 1/2 cup chopped pistachios
Instructions
- Preheat oven to 375 degrees F (190 degrees C). Grease muffin cups or line with muffin papers.
- In a large bowl, whisk together flour, sugar, baking powder, and salt.
- In another bowl, mix milk, oil, and eggs.
- Stir the wet ingredients into the dry ingredients until just moistened. Fold in white chocolate chips and pistachios.
- Spoon batter into prepared muffin cups.
- Bake for 20 to 25 minutes, or until a toothpick inserted into the center comes out clean.
- Cool in pan for 5 minutes, then remove to wire rack to cool completely.
Notes
Store in an airtight container for up to 3 days. For extra crunch, toast the pistachios before adding.
