Description

Delicious muffins combining white chocolate and pistachios for a sweet and nutty treat.


Ingredients

Scale
  • 2 cups all-purpose flour
  • 1/2 cup white sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 cup white chocolate chips
  • 1/2 cup chopped pistachios

Instructions

  1. Preheat oven to 375 degrees F (190 degrees C). Grease muffin cups or line with muffin papers.
  2. In a large bowl, whisk together flour, sugar, baking powder, and salt.
  3. In another bowl, mix milk, oil, and eggs.
  4. Stir the wet ingredients into the dry ingredients until just moistened. Fold in white chocolate chips and pistachios.
  5. Spoon batter into prepared muffin cups.
  6. Bake for 20 to 25 minutes, or until a toothpick inserted into the center comes out clean.
  7. Cool in pan for 5 minutes, then remove to wire rack to cool completely.

Notes

Store in an airtight container for up to 3 days. For extra crunch, toast the pistachios before adding.
