Description

A decadent cheesecake featuring white chocolate and fresh strawberries, perfect for special occasions.

Ingredients

Scale
  • Crust:
  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/3 cup unsalted butter, melted
  • Filling:
  • 2 cups white chocolate chips
  • 3 packages (8 oz each) cream cheese, softened
  • 1/2 cup granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup sour cream
  • Topping:
  • 2 cups fresh strawberries, sliced
  • 1/4 cup strawberry jam, melted

Instructions

  1. Preheat oven to 325°F (163°C) and grease a 9-inch springform pan.
  2. For the crust: In a bowl, mix graham cracker crumbs, sugar, and melted butter. Press the mixture into the bottom of the prepared pan.
  3. Bake the crust for 10 minutes, then let it cool.
  4. For the filling: Melt the white chocolate chips in a microwave or double boiler and set aside to cool slightly.
  5. In a large bowl, beat the cream cheese and sugar until smooth. Add eggs one at a time, beating well after each addition.
  6. Mix in the vanilla extract and sour cream, then fold in the melted white chocolate.
  7. Pour the filling over the cooled crust and smooth the top.
  8. Bake for 55-60 minutes or until the center is just set. Turn off the oven and let the cheesecake cool inside for 1 hour.
  9. Remove from the oven and refrigerate for at least 4 hours or overnight.
  10. Before serving, arrange sliced strawberries on top and brush with melted strawberry jam.
