For the Crust:
- 2 1/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 3/4 cup packed brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 teaspoon peppermint extract
- 2 cups semi-sweet chocolate chips
- 1 cup white chocolate chips
- Coarse white sparkling sugar for rolling
Instructions
1. Prepare the Crust:
- Preheat oven to 375ยฐF (190ยฐC). Line baking sheets with parchment paper.
- In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.
- In a large bowl, beat the softened butter, granulated sugar, and brown sugar until creamy. Beat in the eggs one at a time, then stir in the vanilla and peppermint extracts. Gradually beat in the flour mixture. Stir in the semi-sweet and white chocolate chips.
- Shape dough into 1-inch balls and roll the tops in coarse white sugar. Place sugar-side up on prepared baking sheets, 2 inches apart.
- Bake for 9 to 11 minutes or until golden brown. Let stand on the baking sheet for 2 minutes; remove to wire racks to cool completely.
