Description

Festive, soft-baked chocolate chip cookies with a hint of peppermint and white chocolate, decorated to look like a snowy winter scene.

For the Crust:

  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 3/4 cup packed brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon peppermint extract
  • 2 cups semi-sweet chocolate chips
  • 1 cup white chocolate chips
  • Coarse white sparkling sugar for rolling

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375ยฐF (190ยฐC). Line baking sheets with parchment paper.
  2. In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.
  3. In a large bowl, beat the softened butter, granulated sugar, and brown sugar until creamy. Beat in the eggs one at a time, then stir in the vanilla and peppermint extracts. Gradually beat in the flour mixture. Stir in the semi-sweet and white chocolate chips.
  4. Shape dough into 1-inch balls and roll the tops in coarse white sugar. Place sugar-side up on prepared baking sheets, 2 inches apart.
  5. Bake for 9 to 11 minutes or until golden brown. Let stand on the baking sheet for 2 minutes; remove to wire racks to cool completely.
