Description

A hearty and magical beef stew perfect for fall gatherings.


Ingredients

  • 2 pounds beef chuck, cut into 1-inch cubes
  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 3 garlic cloves, minced
  • 4 carrots, sliced
  • 3 potatoes, diced
  • 2 cups beef broth
  • 1 cup red wine
  • 2 bay leaves
  • 1 teaspoon thyme
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add beef cubes and brown on all sides, about 5 minutes.
  3. Add onion and garlic, cooking until softened, about 3 minutes.
  4. Stir in carrots, potatoes, beef broth, red wine, bay leaves, and thyme.
  5. Bring to a boil, then reduce heat and simmer for 1.5 to 2 hours, until meat is tender.
  6. Season with salt and pepper to taste before serving.

Notes

For a magical twist, add a pinch of cinnamon or serve in a hollowed-out pumpkin.
