Ingredients

- 2 pounds beef chuck, cut into 1-inch cubes
- 2 tablespoons olive oil
- 1 large onion, chopped
- 3 garlic cloves, minced
- 4 carrots, sliced
- 3 potatoes, diced
- 2 cups beef broth
- 1 cup red wine
- 2 bay leaves
- 1 teaspoon thyme
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Add beef cubes and brown on all sides, about 5 minutes.
- Add onion and garlic, cooking until softened, about 3 minutes.
- Stir in carrots, potatoes, beef broth, red wine, bay leaves, and thyme.
- Bring to a boil, then reduce heat and simmer for 1.5 to 2 hours, until meat is tender.
- Season with salt and pepper to taste before serving.
Notes
For a magical twist, add a pinch of cinnamon or serve in a hollowed-out pumpkin.
