Description

A fresh and zesty pasta dish featuring creamy ricotta, vibrant spinach, and bright lemon flavors.


Ingredients

  • 8 ounces of pasta
  • 1 cup of ricotta cheese
  • 2 cups of fresh spinach leaves
  • 1 lemon (zested and juiced)
  • 2 tablespoons of olive oil
  • 2 cloves of garlic, minced
  • Salt and pepper to taste
  • Optional: grated Parmesan cheese for serving

Instructions

  1. Boil a large pot of salted water and cook the pasta according to package instructions until al dente; drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat and sauté the minced garlic for 1-2 minutes until fragrant.
  3. Add the fresh spinach to the skillet and cook until wilted, about 2-3 minutes.
  4. In a bowl, mix the ricotta cheese with the lemon zest and juice until well combined.
  5. Toss the cooked pasta with the spinach mixture and ricotta-lemon mixture in the skillet.
  6. Season with salt and pepper to taste, and serve immediately, optionally topped with grated Parmesan cheese.

Notes

This dish is best served fresh and pairs well with a crisp white wine. For a vegan version, substitute ricotta with a plant-based alternative.
