- 8 ounces of pasta
- 1 cup of ricotta cheese
- 2 cups of fresh spinach leaves
- 1 lemon (zested and juiced)
- 2 tablespoons of olive oil
- 2 cloves of garlic, minced
- Salt and pepper to taste
- Optional: grated Parmesan cheese for serving
Instructions
- Boil a large pot of salted water and cook the pasta according to package instructions until al dente; drain and set aside.
- In a large skillet, heat the olive oil over medium heat and sauté the minced garlic for 1-2 minutes until fragrant.
- Add the fresh spinach to the skillet and cook until wilted, about 2-3 minutes.
- In a bowl, mix the ricotta cheese with the lemon zest and juice until well combined.
- Toss the cooked pasta with the spinach mixture and ricotta-lemon mixture in the skillet.
- Season with salt and pepper to taste, and serve immediately, optionally topped with grated Parmesan cheese.
Notes
This dish is best served fresh and pairs well with a crisp white wine. For a vegan version, substitute ricotta with a plant-based alternative.
